Rice and Bean Salad
1/2 cup basmati rice
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons vinegar (white, apple, or red)
1 1/2 teaspoons cumin
1 garlic clove, crushed/minced
1 teaspoon salt
1/4 tablespoon black pepper
1 (15 ounce) can black beans, drained and rinsed
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1/2 cup cooked corn
1. Cook the rice according to package directions.
2. While rice is cooking, combine the oil, lemon juice, vinegar, salt, black pepper, garlic, and cumin in a bowl. Whisk together until combined.
3. Add black beans, green pepper, onion, and corn.
4. Once rice is finished, add and mix to combine everything. Cool in the refrigerator. Serve!
This also works really well as a wrap filling.
