Raw Mac n Cheeze

What you need: 

1 to 2 carrots, shredded
1/4 cup nutritional yeast
2 teaspoons olive oil (or 1/4 avocado)
1/2 teaspoon garlic powder
1/2 teaspoon ground red pepper
1/2 teaspoon salt

What you do: 

1. Set carrots in bowl.
2. Blend other ingredients until smooth.
3. Pour or scoop over carrots.
So this doesn't taste much like mac n cheese, but it cured my craving for cheesy noodles!

SO HOW'D IT GO?

What a great and simple recipe! I used 3 carrots and instead of adding more oil for the moisture I added a touch of soy milk. I also added some chopped avacado to the finished dish! SOOOOO GOOOOOD that I ate the whole bowl myself! Thanks aigroc for all your great recipes!!!! Laughing

This was a pleasant surprise. This recipe finally made me appreciate Nutritional Yeast for what it is. I used the 1/4 avocado instead of oil, and left out the red pepper. Just wonderful.

I'm new to raw eating.  Tried this recipe with some modifications.  I used zuccini noodles instead of carrots and added lemon juice and apple cider vinegar for that cheesy twang.  I found it delicious, and ate a couple of bowls of it.  So props to the taste aspect.  BUT afterwards I had a headache and diarrhea...peeing bright flourescent yellow too.  Started wondering about the health value of nutritional yeast and did some research.  Seems to be pasteurized.  hmmm....  so much for raw.  ALSO, it contains MSG, hence my headache.  It can cause a host of things.  I'm throwing out my NY and turning to nut based cheese substitutes.

I added 1/4 of a green pepper diced on top of the shredded carrots.

I subbed 2 teaspoon's of Olive Oil for 1 teaspoon Olive Oil, 1/2 a small Avocado, small squirt of Braggs.

Subbed ground pepper for Chilli Flakes.

Still added water at the end to desired consistency!

Mine turned out really really salty so I'll prolly only add Bragg's and cut out the salt entirely next time.

Did you mean tablespoons instead of teaspoons? for the olive oil?

Because the first time I made this...it was a powdery mess..in the blender....

Today I made it with more olive oil.....and it turned out fine.

This was not bad. Next time I will half the garlic and red pepper. The salt I will just add to taste.

I made some major changes to this recipe, but I have to give credit where credit is due: it was delicious!
I substituted a tablespoon of flax oil and about 1/3 cup soaked raw cashews for the avocado, and I ended up having to add a little water to make the sauce creamier. I also added 2 reconstituted sun-dried tomatoes and I used chili powder instead of ground chili flakes.

Man, it was so good. I will probably make it again in a day or two.
