Mushroom Stroganoff

What you need: 

8 oz of noodles (if an eggless egg noodle is available it is ideal)
8 oz mushrooms
1 onion
1 or 2 cloves garlic
1 to 2 tablespoon vegetable bullion (preferably onion flavor)
2 to 3 tablespoon flour (unbleached white flour is ideal)
1 teaspoon Kitchen Bouqet (this is sold at most grocery stores)
2 tablespoon tamari or soy sauce
1 teaspoon Worcestershire sauce (warning this must be bought at a health food store becuase it
is regularly made with anchovy paste)
1/4 cup of blended tofu to yogurt consistency (optional)

What you do: 

Cook noodles according to package directions. In a medium saucepan saute onion with a little oil until almost transparent add sliced mushrooms and cook until soft add garlic for 20 seconds add 2 cups of water to pot. Add bullion to mixture and bring to a boil over medium heat. While mixture is heating up, place flour in a measuring cup or bowl with 1/4 cup of water and whisk to dissolve flour. Stir flour into gravy and whisk to prevent lumps. Add tamari , Worcestershire, and kitchen bouqet. If using, stir in tofu. Pour over noodles. Enjoy

SO HOW'D IT GO?

Its a shame you didnt veganize it, would have loved to hear how the family liked it .

I used this recipe as a basic guideline and it was SO GOOD! :)

I didn't veganize it, so I used egg noodles, sour cream and some heavy whipping cream too.

I added both tamari and soy sauce because I hate worchestire sauce. I'm using the word hate, here.

I also added some different spices, like parsley, garlic salt, pepper, and lawry's.

My entire family scarfed this down- including my VERY PICKY 4 year old! :)

this was so good! let the onion caramelized for a while, and after the mushrooms were cooked trough, i deglazed the pan with red wine.
it gave it kind of a "beef bourguignon" taste that was really good. perhapes seitan would enhance the bourguignony feeling...
i served it over mashed potatoes. my meat-eating boy-friend loved it!

I made this after work and was suprised how easy it is to make!  I remember my grandma making homemade stroganoff and all the time she put into it, but this was really easy and super good.  I didn't add any worchestershire sauce or kitchen bouquet and I used baby bella mushrooms.  Had to add a little salt, but I like my foods salty and it may also have been because I didn't add two of the ingredients.  I also threw in a scoop of Tofutti sour cream and it made the meal!  Totally reminded me of the stroganoff my grandma used to make.

I had a HUGE amount of mushrooms that needed using and thought this recipe looked easy and sounded good. It was. And it tasted really good. I ended up guessing on the amounts of what to use due to the volume of mushrooms I was using and it still turned out to be an amazing dish.

Variations I used- A splash of vegan white wine for some added body.
- vegan cream cheese (think tofutti 'better than cream cheese') instead of blended tofu (although it's kind of the same thing- but with more flavour).

Oh yeah- this was also the first time I've made stroganoff. After this- I'll be making it on a regular basis!

i made this frequently four years ago and i'd forgotten how good it was!

i added broccoli (you should definitely do this...it's amazing), whole-wheat flour (instead of white) and soy sauce. i skipped the kitchen bouquet (i've never been able to find it, anyway) as well as the worcestershire sauce, but I added a splash of soy milk to the flour mixture, as well as a decent helping of nutritional yeast and dried thyme.  i didn't add the tofu, but i might try that next time for an added protein boost.

p.s. have some vegan bread and butter ready afterwards to mop up all the sauce! mmmm. the heartiness of it all reminds me of meals with my family when i was growing up, so it's the perfect recipe for when  homesickness strikes! <3

p.p.s. next time i'll post a picture, if we can hold off eating it all first!

I added 4 garlic cloves (garlic lover)and using seitan instead.Very very very good meal.
