Mmm Vegan Carob Brownies

What you need: 

1 1/2 cups sugar
1 cup carob powder
1/2 teaspoon baking powder
2 1/2 cups unbleached whole wheat flour
1/4 teaspoon (or a dash) sea salt (fine)
1 cup applesauce
1 mashed banana
1 teaspoon almond (or vanilla) extract
1/4 cup soy milk
3/4 cup margarine
1/2 cup vegan carob chips
sliced almonds (optional)

What you do: 

Preheat oven to 350 degrees.
Combine all ingredients. Spoon batter into medium sized muffin trays, sprinkle top of batter with carob chips and/or sliced almonds. Check with fork after 15 minutes. Bake for approx. 25-30 minutes, until fork comes out clean.
Delicious!

SO HOW'D IT GO?

I made some changes and they are awesome. Only 1c sugar. Used Organic cake flour. Instead of almond I used 1/4 "pinch" spoon of amaretto flavoring. Almond milk instead of soy. Grapeseed oil instead of margarine.  Very yummy and very moist - will become one of my favorites.

The texture is good, but the first bite is a little off-putting.  You have to "get into" the brownie a bit before you really start to enjoy the texture and flavors.  The almond extract was an interesting addition; wasn't quite sure if I liked the carob-almond combo at first, but once I got into it, it was very pleasant.  I made these for a bakesale.  I will write an update and let you know how people liked them.
