Irish Cream Pancakes

What you need: 

1/4 cup vegan coffee creamer (like Silk Hazelnut Creamer; if you use plain, add 1 teaspoon almond extract)
3 tablespoons whiskey
1 tablespoon chocolate syrup
4 teaspoons WARM water
3 teaspoons Ener-G Egg Replacer
2 cups Bisquick-like baking mix (check ingredients)
1 cup nondairy milk
1 teaspoon vegetable oil + extra for pan
4+ drops green food dye (optional)
nondairy whipped topping (optional; like Soyatoo brand)

What you do: 

1. Bailey's Irish Cream Substitute: In a bowl or container, thoroughly mix coffee creamer, whiskey, and chocolate syrup.
2. Egg Substitute: In a mixing bowl, mix Ener-G Egg Replacer and WARM water until smooth.
3. Pancakes: In a bowl, combine baking mix, milk, Irish cream substitute, egg substitute, 1 teaspoon vegetable oil, and food coloring; mix until smooth as well.
4. Cooking: In a pan, heat a coin-sized amount of oil over medium heat until slightly hot. Add batter and cook until the pancake starts to bubble and the bottom side of the pancake has become golden. Flip and continue cooking until the other side is golden.
5. Serve warm and topped with whipped cream. Enjoy!

SO HOW'D IT GO?

A great alternative to "corned beef" and Irish soda bread to celebrate the holiday.  I made them into waffles instead of pancakes.  I used tofu as an egg replacer instead of energy.  I topped the waffles with soyatoo whip tinted green with food coloring, green sprinkles, and shaved dark chocolate.

Also, cool whip is not exactly vegan. It does have casein in it, which comes from milk.

ok there are two from provamel, there is the alpro soya dream which is for sweet things like pouring over fruit, and alpro soya cuisine which is suposed to be for cooking, both are fine tho, about 1 euro,

the ingrediants are :

Water, vegetable oil, hulled soya beans (6%), fructose-glucose syrup, emulsifier: soya lecithin, stabilisers: xanthan gum, guar gum, carrageenan, sea salt, natural flavouring, antioxidant: natural tocopherol.

in germany its called alpro soja, i assume you can get it elsewhre in the world

You can also buy at from Pangea online: http://www.veganstore.com/food-items/dairy-alternatives/vegan-heavy-cream-substitute/Page_3/624.html. I would imagine that, in this case, the Silk creamer would probably work just fine, though. :-)

Dear Vegweb users... I apologize for my mistake, I don't remember ever seeing ingredients listed on a bottle of "Bailey's" stating real cream of any sorts ( I assumed it was just because of the texture... I'm usually more cautious than that).  Being that I'm allergic to dairy and choose not to consume as well, I'm VERY surprised that I didn't have a reaction to this recipe.  Again, I apologize... but thanks for the recipes on the homemade version.  I will make sure to try your suggestions~

Hi Nima Toad, im not sure what the silk creamer is but soya cream is like normal cream, it comes in small cartons and can be found in most health food shops, usually with the soya milk section. you can use it for cooking too, ive found it also in a couple of supermarkets here but most of them dont carry it

Hi, Dodo, can you please read the box and tell us the name of the brand, and the ingredients? Not to be a pest  :-O but I do have some  hydrogenated cream substitute in the fridge (Rich's) and would be VERY happy to find a good tasting soya cream that isn't hydrogenated so I can throw this stuff out.

i should also add that a perfect exact vegan baileys can be made by mixing 3/4 kaluha and 1/4 soya cream, takes just like it and is a big favourite here cos i looooved baileys b4 i went vegan  ;)

Dodo, when you say soya cream, do you mean soymilk, or something more special and creamy? Could I use the special silk creamer? Sounds yummy!
