Indian Lentil Stew

What you need: 

2 tablespoons oil
1 small onion, chopped
2 cloves garlic, minced or pressed
1" piece fresh ginger, minced
4 cups vegetable broth
1 cup masoor dal (red lentils)
2 cups potatoes, peeled and cubed
1 cup carrots, peeled and sliced
1 tablespoon dhana jeera (cumin and coriander powder 50/50)
1 teaspoon cayenne powder
1/2 teaspoon garam masala
1/8 teaspoon turmeric
salt, to taste

What you do: 

1. In a large pot, saute onion in oil. Add garlic and ginger, and saute until onion is translucent. Add vegetable broth, lentils, potatoes, carrots, and seasoning.
2. Bring to boil and then reduce to simmer until potatoes and carrots are soft.
3. Check taste and add seasoning if needed. Serve with cumin rice.'

SO HOW'D IT GO?

I made it without the coriander and ginger (because I didn't have any) and also without the pepper (because I'm a wimp) and it was still delicious!

This is a great recipe. In the directions, it lists to use green chile, but it is not listed in the ingredients list, so I do not use it when I make this stew. I always just add everything at once and it turns out great after about 20 minutes or less. It's a favorite over here, and I make it as often as I can as it is filling, spicy, delicious, cheap, easy to prepare, and makes enough that we eat leftovers of it the next day. If only I could get my 4 year old boy to eat it, it would be my dream dinner. But then again he won't eat anything without peanut butter in it. :)
