Green Apple Breakfast Salad

What you need: 

2 stalks celery, halved lengthwise, then slice into bite-sized pieces
1 granny smith apple, diced into 1/4" to 1/2" pieces
1 small bunch green seedless grapes, halved (about 20 grapes)
1/3 cup shelled pistachios*
1 sprig fresh mint, devained and chiffonaded (6 leaves)
1 tablespoon agave nectar
1 tablespoon lemon juice

What you do: 

1. In a bowl, combine celery, apple, grapes, pistachios, and mint; toss to thoroughly mix.
2. Drizzle with agave nectar and lemon juice; toss to coat.
3. Serve immediately or chill before serving. Tasty with waffles, or any breakfast/brunch potluck. Good for you, easy to double or treble, and everyone loves it!
* I know pistachios are expensive, but I've tried this with walnuts, pecans, even macadamia nuts, and pistachios are hands down, the best flavor and texture. Not too crunchy, not too strong a taste, juuuust right (As Goldilocks would say). Besides, they go well with the green theme!
I've made this salad almost every Sunday for the last 3 months, and have gone through many many permutations until I came to this perfect combo of ingredients. It started as a version of waldorf, and came to its final iteration on St. Patrick's Day - appropriately so because it's all GREEN!
