General Tao's Tofu

What you need:

1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve

What you do:

1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.

Quick question, for those who used Morningstar Farms chick'n strips - should I cook them beforehand and then put them in the fridge before using, let them thaw/run under hot water and then fry, or just prepare them without thawing? I made this once already with tofu and it was delicious, but I also wanna try it with the chick'n strips, especially when I make it for my omni parents. Thanks!

If you're using the frozen ones I think you are, you just need to bread them and fry like you did the Tofu. I've used both. =)

I found that if you add two tablespoons of lemon juice to the mixture (or more to taste) with the sauce and chicken strips, it comes out like lemon chicken, as Morningstar Farms chicken strips are kind of awful alone.

Good luck!

For me this was a very complicated recipe to make.  It took much longer then 30min for me  Was very good though just felt a little fattening.  Will definitely keep in my recipe box for special occasions.

This is really delicious!  Next time I'll either bake the tofu or just use plain, steamed tofu because I don't feel the frying is necessary - the flavors of the sauce are so good that it just won't matter, in my opinion.  I used lo mein noodles instead of rice and added carrots to the broccoli.  So good.  Great recipe!

There are already a zillion great reviews about this recipe, but one more won't hurt! This stuff is amazing, I froze my tofu the day before and sliced it pretty thin. I think next time though I'll make the chunks even smaller because when you get to the inside of the tofu chunks you can still kind of taste the tofuey-ness of them (which I don't mind, but my room mate isn't to thrilled by the taste!). Thank you a dozen times for this amazing recipe!
