Easy & Delicious Asian Stir Fry

What you need:

1/2 bag veggie chicken tenders (or tofu, etc.)
1 head of fresh broccoli, cut into florets
1 clove of fresh garlic, minced
3-4 tablespoons peanut butter
6 tablespoons tamari/soy sauce (Braggs might work, too)
6 tablespoons orange juice
a little splash of sesame oil
a little splash of canola oil
1/2 cup - 1 cup jasmine rice, cooked

What you do:

Mix the peanut butter, tamari sauce, and orange juice in a wok or a large pan. Heat on low and stir. Add garlic, chicken tenders, broccoli, sesame oil, and canola oil. Stir fry on medium-high.
Remove from heat and mix with rice. Yum!

Fantastic! I was in search of a simple stir fry sauce that didn't require a trip to the grocery store.
Everything was easily at hand, and I couldn't have been more happy with my results.
I eyeballed the measurements and added broccoli, green and red bell peppers, and a chili pepper. I fried tofu beforehand and threw it in. So good!
Bottom line...if you're crazy about peanut butter, this sauce rocks.

This is an excellent, easy recipe. I have almost no cooking skills but managed to make this quickly and easily and will definitely do it again.

I suggest a few modifications:

1. If you're using tofu, shallow-fry it beforehand.
2. Lightly saute the garlic separately before you add it to the general mix.
3. I used 3 tablespoons of peanut butter and 6 tablespoons of tamari, as the recipe called for. While this was tasty, I think it might be too salty for some people. I recommend either using 4 tablespoons of peanut butter, or reducing the tamari amount to 4 or 5 tablespoons.
