Dulce de Coconut

What you need: 

1 cup light coconut milk
1 cup vanilla or plain soymilk
1/4 cup sugar
1 1/2 tablespoons arrowroot powder
1/2 cup flaked sweetened coconut
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon (optional)
1/4 cup raisins

What you do: 

1) Mix or whisk sugar, milks, and arrowroot in a saucepan. Cook over medium-high heat. Stir frequently, add in flaked coconut. Once the mixture starts to thicken (5 to 10 minutes), take it off heat. For thicker pudding add more arrowroot. Stir in vanilla and cinnamon if using. Stir in raisins and let pudding stand two minutes so that the raisins plump. The raisins add a nice tartness. Serve warm or chilled. Garnish with more flaked coconut if desired.
Source of recipe: I came up with this recipe after I had left over coconut milk from making a coconut lime curry sauce.

SO HOW'D IT GO?

Made this today and it turned out great! I used a bit more arrowroot powder to thicken it more, but still didn't get it quite where I wanted it. But the flavor was amazing!
