Creamy Balsamic Vinaigrette

What you need: 

2 tablespoons Vegenaise
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
3/4 cup olive oil (extra virgin)
1 teaspoon chives (finely minced)
1 teaspoon parsley (finely chopped)
salt to taste (I like Spike instead)
ground pepper to taste

What you do: 

Whisk together balsamic vinegar, chives, vegenaise, Dijon mustard, parsley, and sugar together in a mixing bowl. Add olive oil while whisking until all the oil is incorporated. Season with spike and fresh ground black pepper. Store in refrigerator until needed.

SO HOW'D IT GO?

oops. i just realized that my balsamic vinegar expired. sooo i'll have to try this again once i go shopping this week. (maybe my taste buds are a little off...?)

i just whipped this up to have with my lunch later...first taste test was pretty good! i might use a little less sugar next time, and i might also try to get better balsamic vinegar (mine was old + cheap = not so great) but i think this recipe is a keeper, especially if you have an empty salad dressing bottle that you're dying to reuse! :) i'll post a picture later ;)
