Cakey Berry Coconut Muffins

What you need: 

1 1/2 cups of flour
1/2 cup of coconut
2 teaspoons of baking powder
1 pinch of salt
1/2 cup of applesauce (can use oil if you prefer)
1/2 cup of silken tofu
1/2 cup of liquid sweetener (I used maple syrup)
1/4 to 1/2 cup of soy milk
1 teaspoon of vanilla extract
1 cup of berries of choice (I mixed blueberries and blackberries)

What you do: 

Preheat oven to 375 degrees. Mix flour, coconut, baking powder, and salt together in a bowl.
Puree applesauce, liquid sweetener, tofu and vanilla extract together and then add to dry ingredients.
Mix in berries, adding soymilk to eliminate any dryness - but don’t add more than 1/2 cup or it'll be too moist.
Bake at 375 for 25 minutes. Don’t over bake - they may not be golden on the top, but stick a fork in and if they’re not wet/doughy take 'em out!
These aren’t overly sweet and do well as a breakfast muffin with a cup of tea :) I hope you enjoy them.

SO HOW'D IT GO?

These were ok.  The flavor was very nice, but the texture was a little chewy for a muffin. Still, we ate them all in 2 days.  :) I used chopped strawberries.
