The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

This really is the best!

I added a lot of vegetables that I cut up in tiny pieces, and served it over home fries.

My first tofu experience, which was a tofu scramble, was NOT the best experience I ever had. So I've been pretty iffy about trying a new one, but the response to this recipe was promising so I decided to try it anyway.

And the result was rather good. It was my first time making a "cheese" sauce with the nutritional yeast, and it was fairly easy to make. As per suggested in comments I cut the cheese sauce by a third, and it was perfect.

It looks exactly like eggs from where I was sitting, and it tasted delicious too. I might put some more mustard in it, but other than that, I'd keep it the way it is.

Since I'm not a fan of sweet peppers,  I used tomato in my scramble, and I love it this way. I might want to try other veggies like zucchini or mushrooms in the future.

I substituted this cheese recipe for the one that was included in this recipe, and it turned out really well.

It's a little pricier since you need cashews for it but I think it's worth it. I added some diced tomato after taking it off the heat and, combined with the other sauce, it was out of this world. I live alone so it was enough for six english muffins, nearly a week's worth of breakfast.

This was AMAZING. So much better than eggs! I've been looking for a solid breakfast food and this is so it. I followed the recipe exactly but had a bunch of sauce left over, so I'll be making a bit less next time. Other than that, I just served it over a toasted English muffin with buttery spread and a bit more nutritional yeast on top. It was toasty and warm and crunchy and soft and mmmmm.

Delicious! It turned out great the first time. Cut the recipe in half and it made the perfect amount for two. Had toooons of sauce, so I'll know it keep it cut in half even if I make a full batch. I also only used half of the margarine, and it came out just right. I added broccoli and mushrooms, as well as garlic, and it tasted fabulous. Overall, awesome recipe! I can't wait to try it again!

okay so, i made the yummy cheese sauce with only a fourth of the suggested amount of margarine and i added some fresh basil.
for the scramble, i added some grated carrots and chopped jalalpenos to the onions and green onions. after i mixed the tofu in, i added some tomato, turmeric, and a little bit of nut yeast.

THIS RECIPE IS THE BEST!!!!
