The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

For veggies I used what I had on hand:  black olives, green chilies, eggplant, and zucchini.

I've never been so compelled to write a recipe review (this is my first!) but this was SOOO good!! I made a few tiny changes just because I didn't have a few things and it turned out awesome. I used tofu that came with herbs packed in it. Also, I was out of yellow mustard so I used half a teaspoon of stoneground. I used way more bell pepper then called for and less earth balance. I served it layered with spinach on sourdough bread. The cheese sauce is so good! I want to eat it on everything.

p.s. I'm a vegetarian, not vegan, and eat cheese when it's around but this cheese sauce was better than any "real" cheese sauce I've ever made . So to anyone that might be serving this to sceptic dairy eaters, it'll be a winner!

I really didn't like this recipe too much. Don't get me wrong it had good flavor, i just could not get past the texture of it.  I only managed to choke down a few bites on a bagel.  However my omni mom enjoyed it!

This is indescribably fantastic.  It seems like I make it two or three times per month and am not sick of it yet.  I halve the cheese sauce and use all of it--it will seem like too much but frying dries the mixture out and leftovers tend to be too dry if not all of the cheese sauce is used  .

I have enjoyed this scramble since I found vegweb, but yesterday I had the pleasure of being served by the recipe's author!  I have always agreed that it really is the best scramble ever, but somehow it tasted even better when Little2Ant cooked it for me :)  Yay "veggs!"    ;)

I wanted to update this to say definitely do not use all of the sauce or it will be quite runny and wet. I used about 1/3 of it and it was perfect. I made 2 more scrambles with the same batch of cheese that week. Either make less sauce or save the left overs for other recipes-up to about a week.

which kind of  nutritional yeast did you use?

My favorite kind is KAL but any yellow nutritional yeast will work (just don't use Brewer's Yeast)

:D This turned out awesome! Looked like eggs... tasted similar to eggs... thank you! I only used like 1/4 of the cheez sauce though... i made "mc muffins" and  called my sister after taking 1 bite and told her she needed to come over asap to eat this!

which kind of  nutritional yeast did you use?

This was very very tasty!! I added cumin, a serano pepper and veggie sausage tastes great with hot sauce. I also like to freeze my tofu before I use it in scrambles, I like the consistency much better.
