Banana Nut Bread

What you need: 

3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

This was my first attempt at making banana nut bread and it came out pretty well! 

I used 1/4 cup cane sugar, 1/2 cup brown sugar, and a quick pour of Sweet 101 Brown Sugar and Vanilla Spice Syrup. Then again, I have a sweet tooth.

This turned out great. I made a few modifications though. I used 4 bananas, 1/2 cup applesauce, 1/2 cup sugar, 1/4 cup brown sugar, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp vanilla extract, 3 tsp baking powder and 1/4 cup reduced fat plain soy milk. I baked it for an hour at 340F. Could have probably baked a little longer but it was still delicious!

I made muffins out of this, and they turned out perfect! Used only 1/2 cup brown sugar, put a couple splashes vanilla, and probably about 3/4 cup mini chocolate chips. The batter was a little dry, sure, but it came out perfect--actually cooked on the inside! Thanks so much for this crazy simple recipe.

This is the only Banana Bread Recipe that I've tried, and I love it!  :)>>>  I love it not only because it tastes so good, but because there are only a few ingredients and no hoop to jump thru when making it. The only adjustment that I make is to lessen the sugar. I only use 1/4 cup of sugar and my family still loves it! Thanks for sharing!!!!  ;)b

This was a great recipe! It seemed a bit dry after mixing the banana and flour, so i added 1/4 cup of almond milk. I also did 1/2 whole wheat flour and 1/2 all purpose. Other than the minor tweak, this banana bread tastes even better than the kind my mom used to make for me!!!

I make this all the time, but tried it last night with all whole wheat flour and using applesauce instead of oil.  I ended up doubling up on the applesauce so moisten the loaf, and I think it could've used even more.  It came out a bit more dense than usual, but it's still delicious.  ;)b

Very soft, very moist, rises beautifully. I added a few dashes of cinnamon and nutmeg. Took it to meet my boyfriend's omni family and they loved it.

I enjoyed this banana bread quite a bit, and I've made it several times now.  Like others, I used less salt than recommended.

I even made a little how-to video for making it. :)
