Banana Nut Bread

What you need: 

3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

SO HOW'D IT GO?

WOW! I just baked this and it tastes just awesome! It's super easy to make and gets done within minutes. I added some cinnamon powder and replaced the walnuts with almonds. My crust is nicely browned and has just the right amount of crispiness to it. LOVE IT! Will surely make it again. :D
Oh yeah...I thought the salt was a bit much for my taste so am gonna cut down on it next time.

Super-Yum. Thank you- i just used a dash of salt instead of a tablespoon-  it is excellent and really easy to make.

:'( I have submitted lots of recipes to vegweb but they have not posted my banana bread recipe. It's quite like the one above, except instead of the sugar i use 1/2 cup of maple syrup, add a tsp of pure vanilla, a shake of cardamom and cinnamon, and i also use a tsp of baking powder. For flour I find barley flour mixed with rye gives banana bread the best taste  ;) Moist and delicious! A failsafe recipe!

Very good...I used 1/2 cup of sugar some soy milk (since it seemed dry)and ground flaxseed. I also added cranberries.  I like that it has hardly any oil but is moist and good.

I LOVE this recipe. We've made it so many times it's not even funny. It makes a perfect travelling snack, if you add 1 cup of oatmeal, 1 cup of dried cranberries, and 1 cup of slivered almonds to the base recipe. Believe me, the bread can take the addition of all those extra ingredients without blinking! It's especially good warmed up, and topped with peanut butter. My partner and I have memorised the recipe already.

Also, we used baking powder instead of baking soda, and it turned out perfectly anyway.

This recipe was very simple and tasty. I left out the salt altogether, and added 1 tsp of vanilla extract, plus a few good shakes of cinnamon. I also added a bit of soymilk to make it more batter-like. I didn't have a loaf pan, so I baked it in a sqaure pan. It came out very dense and moist, and it was gone within a day!

One tablespoon is a lot of salt. I cut it back to like half a teaspoon, and didn't have any problems. I used a square baking dish with no problems at all. Very good solid recipe.

I didn't have walnuts on hand, so I used almonds instead. I also added a healthy bit of cinnamon, because I love cinnamon in banana bread. My whole house smells lovely right now.

Yummy yummy in my tummy  ;D tastes lovely, although next time I make it I'll use less sugar because it was slightly sweeter than it had to be.

mmmm. I love this bread. Nice and soft. I didn't add any nuts, and I added molasses and cinnamun and a lot more sugar to balance out the salt.. too much salt haha. but yum.

this banana bread is sooo good!! i just made it and have almost eaten half the loaf!! YUM :P
