Banana Nut Bread

What you need: 

3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

SO HOW'D IT GO?

I only made a few changes to this recipe and it turned out very good! I used 1C whole wheat flour, 1/2C unbleached white flour and 1/2C oat flour. I used a little less than 1/2C sugar and it's still very sweet, so I'll probably do even less next time. I added 1T cinnamon, 1/2t vanilla extract and 3/4C walnuts. Next time I'll do half the amount of salt because you can definitely taste it and even more walnuts. It's a little on the dry side but not bad. Cooked it for about 45 minutes. For the record, I used 3 very big and very ripe bananas. Will definitely use this recipe again!

Made this an hour ago and it's half gone already :D Delish. No egg replacers or soy anything so it was real. I love simple. I followed the recipe exactly - only adding nutmeg and cinnamon. I used half whole wheat and half white flour. I understand why some people complained that the dough was too dry - it is- until you REALLY mix it together and then it's a great consistency. It's perfectly sweet with this amazing caramelized crust . Can't wait to see what it tastes like room temp. I really recommend not changing anything about this recipe (although you can't go wrong with cinnamon and nutmeg).

OMG!  Just made this today and am enjoying my 1st slice.  It is amazing and soooooo delicious!  No need for any topping.  This is my banana bread recipe for life!

This was my first attempt at making banana nut bread and it came out pretty well! 

I used 1/4 cup cane sugar, 1/2 cup brown sugar, and a quick pour of Sweet 101 Brown Sugar and Vanilla Spice Syrup. Then again, I have a sweet tooth.

This turned out great. I made a few modifications though. I used 4 bananas, 1/2 cup applesauce, 1/2 cup sugar, 1/4 cup brown sugar, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp vanilla extract, 3 tsp baking powder and 1/4 cup reduced fat plain soy milk. I baked it for an hour at 340F. Could have probably baked a little longer but it was still delicious!

I made muffins out of this, and they turned out perfect! Used only 1/2 cup brown sugar, put a couple splashes vanilla, and probably about 3/4 cup mini chocolate chips. The batter was a little dry, sure, but it came out perfect--actually cooked on the inside! Thanks so much for this crazy simple recipe.

This is the only Banana Bread Recipe that I've tried, and I love it!  :)>>>  I love it not only because it tastes so good, but because there are only a few ingredients and no hoop to jump thru when making it. The only adjustment that I make is to lessen the sugar. I only use 1/4 cup of sugar and my family still loves it! Thanks for sharing!!!!  ;)b

This was a great recipe! It seemed a bit dry after mixing the banana and flour, so i added 1/4 cup of almond milk. I also did 1/2 whole wheat flour and 1/2 all purpose. Other than the minor tweak, this banana bread tastes even better than the kind my mom used to make for me!!!
