Banana Cake

What you need: 

1 medium banana
1 1/2 cups flour
7 tablespoons olive oil
1 tablespoon vinegar
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon baking powder
3 tablespoons cinnamon
1 cup sugar
1 cup water

What you do: 

1. Preheat oven to 350 degrees F, and grease small pan. Place banana in plastic bowl and put it microwave for 20 to 30 seconds. Remove banana from microwave and stir well until banana is mushed. Add the flour to the banana and mix well.
2. Add olive oil, vinegar, vanilla, and salt; stir. Add baking soda, baking powder, and cinnamon, and mix again.
3. Add sugar and stir well; and finally add the water (before this your dough may seem gunky, but when you add the water and stir well it will look like normal dough). Place in prepared pan, and bake for around 30 minutes.'

SO HOW'D IT GO?

I've made a lower-carb and lower fat version of this recipe (applesauce for the oil and substituting for the flour) and it came out great
I also added a small amount of dates (in lieu of part of the sugar) and pecans and walnuts for a bit of vegan protein yess

I made these into cupcakes and added shredded coconut. So good! I didn't have a lot of hope for them; the batter was runny, and I subbed half the sugar for stevia. But they turned out amazing! Very soft and moist. Everyone else loves them, too. I also used 3 tbs cinnamon for a double recipe.

Great cake....but it didnt rise that much..maybe it needs two teaspoons of baking powder.  :)>>>

i was so pleased to find a banana cake recipe with things i had on hand! i made some cupcakes for my vegan friend's birthday party, and they came out beautifully. i made some peanut butter frosting with coconut milk and powdered sugar. yum!

I have just made this as a birthday cake and made a cupcake one to taste...it was LOVELY! I doubled up the recipe, used half oil and half apple sauce and substituted 1/4 of the sugar with banana milkshake powder. I made an icing with marg, icing sugar and banana milkshake powder and topped with candied walnuts ( 1 cup of walnuts, 2tbsp marg, 2 tbsp sugar and cinnamon...stir over a high heat until caramalised).

I like that the ingredient list is so minimal! It's baking right now and smells soo good; I hope it turns out better than the other vegan banana cakes I've tried!! :/

This cake was amazing!!! It did take a bit longer to bake than instructed, but that just meant the whole house smelled like delicious banana cake for a little while longer.  Thank you so much for this cracker-jack of a recipe!

I wanted to add that I only used 2 tablespoons of cinnamon, and that was plenty.  I might even use a little less next time.  The chocolate chips sound really good too, I will add them too

I love this cake!!  I put a chocolate glaze over it and it was amazing!

Very good recipe.....I omitted the allspice used more cinnamon in place of and used apple cidar from fridge no vinagar .....Moist and yummy bread with great texture and flavor...My non-vegan family had no clue.....Will use again...
