Apricot Yogurt

What you need: 

500 grams Dried Apricots
1 liter Unsweetened Soya Milk

What you do: 

Chop the apricots quite finely. Put them into a bowl with the soya milk in the refridgerator for 48hrs. You can stir occasionally if you like!
The longer you leave it, the thicker the yogurt becomes.
You don't really need a sweetener because it turns out quite sweet naturally, but one idea is to also add a little Cointreau to make things a little more interesting.
It sounds as if it won't work, I know, but if you try it you'll be surprised!

SO HOW'D IT GO?

i had left this mixture for 4 days, and all i had was chunky apricots in thick-ish milk... not very youghurty... I think it was probably my fault in that i used homemade almond milk instead of soy milk but, today i had the brilliant idea to blend it and it is now, a very good thick yoghurt texture and taste. I'll be making this weekly to have with granola and berries. Definately a keeper recipe, though i do recommend to blend it.
Oh, and i added vanilla for a little extra flavour. delicious :)

  Question:  do you cover the bowl or container in the fridge?

Before trying this recipe I have NEVER purchased dried apricots but I gave this yogurt a shot and I think I will start buying them by the ton...

Oh, and be sure to use unsweetened soy milk because the product is pretty sweet!

how long did you leave the youghurt cos it always comes out great for me!  :)

All I got was a frightening mess that tasted (and looked) vaguely like my cat had a hairball in my tupperware...suggestions?

Dude, this is really good.  Yes, I was skeptical at first, but it does thicken up overnight and I just LOVE the smell of it!  So simple and tasty ;D

I thought this recipe was a bit too sweet also.  Next time I will use 1/2 the amount of apricots.
