Nut Roast RollIngredients (use vegan versions): for the filling, use the ingredients from the recipe at this
link 1 package of frozen, vegan puff pastry (thaw according to instructions on package)
handful of white sesame seeds
Directions:Mixture 1 (ingredients olive oil through lemon juice): Cook the onion, garlic and portabellas in the oil or margarine until tender, and remove from the heat.
Chop the cashews by hand or in a food processor; cut the bread into cubes. Add the cashews and bread to the onion, then add the vegetable stock, salt and pepper, nutmeg, and lemon juice.
Mixture 2 (ingredients toasted bread cubes through salt to taste): Mix together all the ingredients from the second list in a separate bowl.
To assemble: Unfold a sheet of puff pastry. It should be a square. Down the middle third, spread about 1/6 of the Mixture 1 in a row. Then place about 1/3 of the Mixture 2 on top. Place about 1/6 of Mixture 1 on top of Mixture 2. Roll up the sides of the puff pastry and seal with melted vegan butter. Turn over roll and place on baking sheet. Brush melted vegan butter all over the roll and sprinkle sesames seeds on top (optional). Make two more of these rolls in the same way. Bake at 425 degrees F for 20 min, or until browned on top.
Notes:
The rolls will be very stuffed—if you have four sheets of puff pastry, divide fillings into four parts accordingly. That will be easier, but it’s not necessary. Toast bread cubes in oven for 10 min at 400 degrees Fahrenheit.
