Best Tasting Pancakes Ever!  Vegan or Otherwise

Ingredients (use vegan versions):

1 cup white all purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    3 tablespoons sugar
    1 teaspoon vanilla
    1 egg replacer
    1 cup soymilk
    2 tablespoons vegetable oil

Directions:

Mix wet ingredients in a medium sized bowl.  Mix dry ingredients in a larger bowl.

Pour wet ingredients into dry - mix well until smooth consistency.

Drop onto medium heat (preheated) pan.  Flip over when each pancake begins to bubble on top.

Serve with vegan buttery spread (if desired) and maple syrup.

This recipe is amazing! I used a mashed banana for the egg, and water instead of soymilk and they are still like the best pancakes i've ever had, even at a restraunt! It was also fun because I used 1/2 the batter to make 1 pancake(which took up the whole pan) and it was soooo good.

I made this yesterday afternoon, but we used Agave nectar (it's reeeally organic sweet sweetener that's healthier than regular organic sugar, and diabetics use it), and they were AMAZING. They're better than the ones I usually make! (I never mixed the dry/wet ingredients in separate bowls before). We're doubling the recipe right now.  Smiley

My family and I just went vegan and I have to say this is the best pancake recipe my family has ever had.  We liked it better than the non vegan pancakes we've had.

I used one mashed banana and rice milk, it was wonderful!  From what I've been reading, isn't one banana per egg the correct substitute?  Whatever it is, it worked great in this recipe!

I made these Sunday morning for breakfast using almost one whole banana and no oil and adding a little cinnamon.  They were very yummy and so much easier to make then another recipe where you have to watch how much you stir or it makes the pancakes tough.  This will be my go to pancake recipe now.

Do you think buckwheat flour would work well in this recipe?  They sound so good especially with a banana.  Smiley

I used ww flour, no sugar, 4 tbl. of chunky natural pb, 3 tbl. of fruit spread, no egg replacer, applesauce in stead of oil and water instead of soymilk. They turned out great!, Thanks!

this was my third time trying these and everytime theyve come out really dense and flavorless..
im not sure what im doing wrong but i have to use a fork and knife to cut them and put alot of topping due to the tastelessness. these are not horrible but definetly not the best tasting pancakes ever..  Undecided

I had a lot of trouble cooking these.  The batter didn't do what a normal pancake batter does.  It didn't really become pancake-like, and turned into some kinda mush-ball on the frying pan.  So, I used the rest of the batter and just baked it in the oven.  It didn't cook quite right.

For egg substitute I used half of a banana, and that gave it a nice little flavor.  I'm not sure what went wrong though.  My frying pan could be a piece of crap...?
