My favorite brunch is scrambled tofu with lots of fixins. I like to mix it up with salsa and guacamole.

I'm going to have to say the "egg" McVegan with a glass of fresh squeezed orange juice.  Freshly baked cinnamon rolls are a close second.

i usually eat raw fruit for my first breakfast and then something high in protein for the second... so i guess that counts as brunch?  yeah, i guess it does.

so raw nuts, tofu scramble, vegan omelet (recipe from "skinny bitch in the kitch" YUM), peanut butter sandwich, leftovers from the night before, or maybe a wrap with tofu/seitan/veggiemeats, raw and grilled veggies, and hummus (or sometimes a mayo i make from blending box of silken tofu with two tablespoons of olive oil, some vinegar, and salt).

um, those are all OR, not AND.  that would be FAR too much food!  yikes!

I have to say, without a doubt, mimosas are my key component.  It's just not brunch without one (or two or three).  Then close behind that for me is bruschetta with fresh tomatoes and roasted red peppers.  Mmmm.  And tofu scramble breakfast burritos with lots of veggies and a little soy chorizo. Mmmmm.  Finally, cap it off with some strawberries.  Oh, and never forget the fresh ground coffee!

I feel like I've posted my favorite brunch several times now... on different things

I love waffles, and some type of breakfast potato, and a tofu scramble ("jake's scrambled 'eggs'"), and fruit? and other stuff.

I'm going to have a Vegan Brunch giveaway of my own!  :>

I like a big bowl of oatmeal or multigrain hot cereal, tricked out with fruits, nuts, granola, maple syrup and soymilk.Good for any meal.

Also, as others have said, anything potato is good. Especially fried, crunchy and spicy.

My ideal brunch:

1. breakfast potatoes, roasted in the oven to avoid having to use TOO much oil.
2. tofu scramble with LOTS of peppers and onions thrown in.
3. roasted tomatoes--the best breakfast side ever
4. really fresh orange juice
5. dark roasted COFFEE, black.

Maybe some toast if I'm really hungry.

Quick brunch favorite--TLT sandwhich (tempeh bacon, lettuce and tomato) on toast with TJ's lowfat mayo.

ooh, my ideal brunch, a high- raw treat!

buckwheat groatmeal (soaked bw groats, sunflower seeds hulled, dates, cinnamon, 1/2 banana, 1/4c water from thai young coconut, all blended until pureed)

eggplant jerky (a lot like bacon--- simply marinate planks of eggplant in bragg's or nama shoyu for 6hrs--- pretty much the night before you wake up ready for it, or when you wake up, if you're having a later brunch)

fresh fruit salad, drizzled in soaked date water for added sweetness

fresh- made almond and hempseed milk

ps- if i get the book i'm giving it to a woman i met, through freecycle, who's FIVE-year old daughter told her she wanted to be vegan (imagine that how awesome, what a smart 5yr old!!!) and so she is learning about it, and is going to fix her daughter's meals vegan.

Tofu scramble with lots of avocado and spinach! That's the best...or refried potatos with vege sausages and baked tomatos. All must be served with earl grey tea or orange juice. YUM!
