Lisa Jervis is the founder of Bitch Magazine and the all-around coolest person on Earth. She's also way into eating easy, healthy, and local. Oh, and vegan. Yay! Canned beans? Never! I make some frijoles de la holla instead, aka beans in a pot. It takes about two hours but you don't have to hover over the stove, just set it and forget it. Lentil 'sloppy joes'-- lentils, ketchup, mustard, & veg worcestershire sauce, made into sandwiches with whatever bread's on hand... easybreezyyummycheap!

Soup! Soup of any kind made from whatever I have lying around :D Some favourites:

Miso with noodles and veges
Hearty root vegetable stew
Spinach and potato

Gotta go with simple stir-fry: tofu, snap peas, water chesnuts, onion, cashews, all on brown rice with vegan soy sauce splashed on.  Yum!

Rice, Beans, onion, coconut, & curry powder with lime juice is my favorite quick recipe.

1/2 a jar of salsa (about $1) + 2 cups leftover cooked black beans (about 30 cents) + bag of mixed frozen veggies (about $1) + miscellaneous dried spices (free- always in the cabinet!) --> Throw it all in a pot and I have about a  week's worth of lunches to take with me to school. It's absolutely delicious, and I usually already have all the ingredients in my freezer and pantry... great if you're stretching to make it to the next paycheck and can't go grocery shopping!

Brown rice, onions, lentils, tamari and kale...all cooked together...easy, cheap and totally delish.

My fav quick dinner is risotto..first pour glass of wine, then saute any veegies fresh from grden or already in fridge , also few cloves of garlic..chuck in couple cups of rice. Stir while sipping wine.  Add bout 6 cups of veggie stock.  Stir while sipping wine again. Do this for bout25 minutes.Put lid (any that fits) on wok and leave it to sit while refreshing your glass.
Serve with any salad and your fav nuts sprnkled on top or vegan parmesan.

Minced garlic and quartered fresh tomatoes sauteed for about 1 minute. Put this over cooked angel hair and add a little salt. DANG!

Tofu scramble of course!  I get blocks of tofu from the Asian market for only $ .99 & freeze them.  When I'm ready for a scramble, I thaw out a block and pan fry it.  I can keep it simple & just add spices or dress it up with beans, rice, or whatever veggies are on hand.  Can be eaten on sliced bread, stuffed in a tortilla, or just served up on a plate.  One batch makes several meals & is good for breakfast, lunch, or dinner.  Perfecto!!  :-*

Asian style rice noodles sauted with onion, tomato and spinach, with a splash of EVOO and balsamic.  Delicious carby goodness.

chana masala!! chickpeas=cheep as chips, and I always have some cooked ones in my freezer, potatoes=cheap as chickpeas.  And I always always have a super-stocked spice cupboard, so this is a really easy, filling, tasty, economical meal.
