Well, she's at it again. Vegan goddess, Isa Chandra Moskowitz, has written a book that makes healthy eating sexy and delicious. I'm impressed. I mean, we all knew she could do it for cupcakes and cookies, but Brussel sprouts? She's gone above and beyond. Appetite for Reduction (http://www.theppk.com/books/appetite-for-reduction/) is the perfect cookbook. It makes healthy food delicious and brings perspective to the phrase, "diet food". No more chemicals and fake foods, these are whole foods that make you feel a whole lot better. I'm also excited to see a book about nutritious eating that isn't just about weight loss, but rather about becoming a healthier you. Pretty freaking cool.

I like it when my boyfriend cooks simple foods for me, like potatoes and frozen veggies in vegan cheese and butter. Not too healthy or cheap, but that's why I need this cookbook...

Any winter squash that is roasted and almost any roasted vegetable.  I love Veganomicon and just made some roasted squash with crushed cumin seeds.  Oh yeah - and roasted veggie soup!  Yum!!!

Gumbo Z'herbes. aka, the version of gumbo eaten during Lent which showcases as many types of greens as you can cram into one stew. Yum!

EGGPLANT stuffed with VEGAN TUNA and a BAY LEAF, battered in TEMPURA, and served with Couscous.

I LOOOOOVVVVE squashes, and whichever happen to be available (butternut, buttercup, acorn, hubbard) gets to be my beautiful soup. I never get tired of squashes!

H-new here. The book sounds fantastic as I love reading her ideas . My favorite winter veggie dish is sweet potatoes in curry sauce with baked tofu.Enjoying seeing everyone's input.

Cashew Mac-Un-Cheese with some Butternut Squash Soup for the winter veggies part.  I could eat the Mac 'N' Chee everyday in the winter, I would love it just the same! :D

I love roasted veggies: potatoes, brussel sprouts, cauliflower,  broccoli, carrots, etc. Yum.

Beets, Kale (nice and sweet in the winter), Cauliflower and Brussel Sprouts... This list could go on and on...  :)
