Help a young man impress his vegetarian GF on Valentines Day?

Alright so I am your average 18 year old guy. My girlfriend of 5 months is a vegetarian (I am not). She also does not eat eggs (unless its cooked in something).

For Valentines day, I am planning on having her over and cooking for her. But I'm having a tough time picking the right thing to cook.

So any suggestions? There is a pretty extensive natural foods co-op nearby and I am a decent (above average atleast) cook. Your help would be greatly appreciated.

What does she usually like to eat? What are her favorite foods?

You could do some layers of eggplant or zucchini or spinach..other veggies, and a nice red sauce. Servie it with a big salad, and garlic bread. :)

but seriously.... have You ever tried making seitan from scratch? That is surprisingly easy but rather impressive.

Buy vital wheat gluten, nutritional yeast, and the necessary spices in the bulk section, then make this Country Fried Seitan recipe, or this more simple version.

Accompany that with some steamed or sautee'd vegetables/greens and a baked or mashed sweet potato. Top the taters with cinnamon and sugar and a pat of Earth Balance butter cut into the shape of a heart.

For dessert, try any of the desserts on this website that have 4 or 5 stars...just go with whatever her tastes are (chocolate? peanut butter? fruit?) and she'll love it. I recommend some kind of chocolatey decadence, like the PMS pie. Or, for a lighter dessert, just dip strawberries into some melted dairy-free chocolate chips, then chill and serve.

Carrot Wench, that sounds superb. I'd go for chocolate dipped strawberries, because they're romantic, sexy, and tasty all at once. Also, don't forget candles! Maybe some incense, a nice table cloth, dimmed lights and some pretty music. She'll be swept away!

I concur. It's such a turn on.

I know this is way late but find what dishes are her favorite, find recipes, experiment. She should love it regardless of how it turns out(the thought always counts more in my opinion) And perhaps some vegan brownies or cake to top it off.
