Easter Dinner Ideas?

My New Year's resolution this year was to go vegetarian (I'm Lacto-Ovo), so this will be my first big holiday sans-flesh. I was wondering what the seasoned vegan/vegetarians eat for the holidays? I was considering picking up a Tofurkey Roast, but I'll be going to my aunt's house where the oven will probably be occupied by the ham. Anyone have a few recipes I can pre-prepare and reheat on arrival? Thanks!

whoa! If I can find vegitarian ham broth powder- I'm totally making this!

yeah - i was gonna say, ive never seen vegetarian ham broth powder. 

im trying to decide what to bring to my familys big easter potluck too.. i usually bring a main/side dish & a dessert.  here's some of the things from vegweb that im thinking about:

I'm seriously considering making Sprintime Medley Risotto from the latest issue of VegNews.....can't find the recipe on line or I would link it.  It has asparagus and sundried tomatoes in it.  Pretty sure that would go over well.  Outside of that all I can think of making is a tossed salad, breads and some desserts.....think I need something that looks more like a 'main' dish but so far I've come up blank.  Maybe that ham thingey...but cut the recipe in 1/2?.....hmmmm vegan ham broth....

What I tend to bring to "Spring/Summer" functions like this is a mushroom/yoghurt(or tofu) pie with a spinach and bread crumb crust from Mollie Katzen's Enchanted Broccoli Forest. It is delicious lukewarm, and is definitely substantial enough to be considered an "entree" for me, and others can have it as a side dish. However, in my experience, if it is for a crowd of 5 or more, I like to make at least two, so that I can have seconds if I want!

Great site AC!  Couldn't find VegNews....found lots of Vegetarian Times...probally just my inability to search for something without getting distracted though...it is probally there somewhere.  Those issues of Kitchen Garden looked real tempting....

Do you think if I used Un-chick and Un-beef style cubes of bullion it would taste something like ham broth?  Couldn't find ham broth...see above for distraction problem.

Hm..I dunno about the "ham." I don't think I've seen that, either. I know the "ham" slices that I've had don't taste like ham..not that that has anything to do with anything.

I wish I could try that roast, it sounds good, but gluten is strictly off limits for me.  I wish I could have "meat" subs sometimes cuz I do miss the meaty texture sometimes.

I know my mom will have ham this sunday, I think I might bring a potato hot dish of some sort to go along with, and a hot veggie, that I can eat.  I know she will have raw fruit and veggie so that is good, and she always bakes GF bread and cookies for me and my brothers, but they aren't vegan.

I have to work on sat so I may hit the store on the way home and stay up late cooking whatever inspiration hits me while shopping.

Honestly since its just LB and I we probably wont make a big deal about Easter.  Neither of us are religious and since Angel wont be here its really no need to put on a big spread for two.  Plus I cant see eating all my candy before the potluck as a good idea. hahah  Maybe I will make some more though!

If I were to be making a huge dinner I would make:
Scalloped potatoes - thinly sliced potatoes, onions, garlic, (celeriac, turnip or parsnips optional but yummy!) drenched in a lush nooch cheezy sauce with plenty of herbs.
Roasted veggies - asparagus, Brussels sprouts, carrots, broccoli rabe, and maybe portabello mushroom slices
Roasted marinated tofu slices or seitan cutlets - a savory flavor with hints of thyme, lemon, and basil
Cold three bean salad - homemade with fresh green beans, flavorful marinade and plenty of pimento and onion pieces along with the kidney and garbanzo beans.

(The last two could be one or the other really.)

Dessert would be homemade chocolate peanut butter candies, cake, fresh fruit, and a sparkling champagne and fruit punch.

If I were making a simple dish to feed myself while over at friends or families celebrations it would have to be easily covering my whole needs for a meal, portable, reheatable on the stove or microwave, delish and pretty enough to tempt others to just try a bite.

The risotto is a good idea if you cook the rice most of the way and then finish it at your destination and adding veggies of choice and stirring to finish cooking.
Another idea might be a soup or stew.  A hearty bean and pasta or a rich and thick lentil and veggie.  These meet all the requirements pretty easily and you could have fun with adding toppings like croutons, crispy fried leeks, sour supreme, fresh herbs or vegan parm.
A one pot dish would be great but somehow bland rice and beans would not be festive enough.  So how about a mulit grain medley with diced veggies and fresh herbs?  Or a rice blend with exotic lentils and crisp veggies? 

If you have oven time then a casserole would be great.  Roasted veggies or portobello wellingtons are always delish.  You could go all out and make a stuffed manicotti dish and just bake it there.  Or stuffed mushrooms or stuffed artichokes.

Here is a link to the ham bouillon...http://www.netgrocer.com/pd/Netgrocer.com/Goya/Ham_Concentrate/8_ct/00041331038379/2D462 It does not state that it is veg and the goya website was not helpful at all..just to let you know...Also I do not believe the hillbilly housewife is vegetarian just frugal...seitan is much cheaper than actual meat.  That being said the recipe did say vegetarian broth.

When Cali mentioned seitan cutlets a bell went off in my head....Seitan Scallopini!  Too much with the risotto?  Am a lemon fiend myself.

Jane, I have made those cutlets several times now.  Though just the base seitan, not the full recipe.  And they are fantastic!  Definitely do the bottom steaming method as that way is so much easier and nicer in my opinion!

I am torn between vegan spanakopita and vegan spinach quiche. Which  one will reheat better? Probably the quiche. Has anyone tried both? I always think of spinach when I think of Easter for some reason ::)

i was thinking of doing the vctotw cookies and creme cupcakes and using the purple creme easter oreos - or just putting a drop of food coloring in the frosting.

of you can do any cupcake and color the frosting to look green like grass and put sprinkles or jelly beans on top to look like eggs.

Another vote for the quiche.  I think it would make a nice Easter dish.

Two enthusiastic thumbs up for the Tofu Quiche with Spinach and Brocolli recipe. It freezes well too if you have leftovers.
