There's a recipe in the Vegan with a Vegeance cookbook that I wanted to make with with she describes as "bean curd sheets" but I don't remember the Japanese name for it. But last time I was at Whole Foods I couldn't find any! You might look on the theppk.com site (the website of the author of the cookbook). Otherwise I can look it up when I get home in about an hour and post it. What time is dinner? :D

That probably would be best. The recipe is actually in Vegan Planet by Robin Robertson. It's called "Soy-Encased Vegetable Patties" and it's definitely a weekend special (time-consuming) project.
I had it almost typed up and ready to post and I lost it so I'm taking that as a sign that I shouldn't violate her copyright!
When I have an ingredient that I can't find s recipe for on vegweb or any of the other veg*n recipe sites that I have bookmarked, I google it and if I find a recipe that only has the fatal flaw of using chicken or beef, I substitute tofu or seitan. It usually works very well.

She has a website but that one isn't one of them:
