Vegetarian Mother's Cookbook cashew yogurt

I made the cashew yogurt out of this cookbook.  At first, I was happy because it set up beautifully overnight. Then I was disappointed, because it was way too sour to eat plain...but it reminded me of something. Sour cream! This week I've added it unsweetended to tacos and plopped it onto pizza (where it really looked cheesy). It is totally delicious this way as a condiment. I don't think I'm going to buy Tofutti sour cream again.

Just wanted to let you all know. Wish I had taken a picture...but I didn't think about it until writing this. Definitely will next time.

It's so simple. I did mine in a pint-size glass Mason jar.  I also have a Vitamix so I was able to get the mixture very smooth, but blending a long time in another blender might get it very smooth too.

Thanks for the recipe, hopfrog.  I like the idea of a cashew yogurt, rather than soy.  Since I can't find the Wildwood plain soy yogurt in my area, and most other plain brands are sweetened, this sounds like a perfect yogurt for using in recipes where you really need a plain, unsweetened yogurt.
