Artisan Vegan Cheese by Miyoko Schinner
Just borrowed this from the library. Any thoughts from others who've tried the recipes?
A number of them call for rejuvelac. Has anyone made this? It seems doable but time consuming. Maybe I'll go for one the recipes that start with soy yogurt instead.
Have not seen that one. The Ultimate Uncheese Cookbook by Joanne Stepaniak is the one I use.

I recently made a batch of rejuvelac and then used it to make the Cashew Chevre. I really enjoyed this cheese spread on some crackers and with tomatoes. It was a little grainy because I used a regular blender--if you have a Vitamix you probably won't have that problem. Next I'd like to try one of the air-dried cheeses. The recipes do take time to age and develop flavor but most of them can be frozen for several months so you could have them on hand for a long time!
Cooking is a frequent activity I do. In my opinion, searching for a wide variety of cooking recipes and try to practice it is the one thing that is fun, and it would be nice if all family members loved the dishes I've made. luxury liveaboard thailand
