Zucchini Bread

What you need: 

2 cups grated zucchini (about 7 small zucchinis)
Ener-G Egg Replacer for 3 eggs
1 cup oil
2 cup sugar
2 teaspoon vanilla extract
3 cups flour
1 teaspoon salt
1 tablespoon baking soda
1 tablespoon cinnamon
2 teaspoon nutmeg
1 teaspoon baking powder
3/4 cup raisins (optional)

What you do: 

Preheat oven to 350, oil 2 8.5x4.5 loaf pans
Mix zucchini, Ener-G Egg Replacer, vegan sugar, oil, and vanilla in alarge bowl.
In another bowl, mix flour, salt, baking soda, cinnamon,nutmeg, and baking powder.
Gradually mix dry ingredients in with zucchini mixture.Stir well.
Pour batter into 2 pans, bake 40-60min.

SO HOW'D IT GO?

I thought this recipe was very good. Everyone that tried it loved it. I made a few alterations. I used half whole wheat flour, replaced half the oil with applesauce, & added walnuts & raisins both. I

The measurements are totally off - way way too much oil, too much cinnamon, nutmeg & baking soda, and the zucchini should be doubled!!!  Sorry this recipe was just plain terrible!  I followed the recipe to a T as well, but the result was overpowering spice combined with metallic baking soda and with only a hint of zucchini.

This was excellent - followed it to a T, except I replaced oil with applesauce. Think I baked it for almost 45 minutes (have a fear of undercooking the middle of bread). It was moist, almost sticky, but so much flavor and sweetness. Walnuts would have been good also.
