York-A-Like Peppermint Patties
1/3 cup corn syrup
1/4 cup vegan margarine spread, softened (I use Earth Balance whipped)
1-1/2 teaspoons peppermint oil or extract, or to taste (I use more)
4-3/4 cups powdered sugar
1 (12-ounce) bag chocolate or carob chips
1. In a bowl, combine syrup, margarine, and peppermint; whip with an electric mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff.
2. Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It's easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on.
3. Melt the chips until creamy and stir-able. Take it off the heat so it doesn't burn.
4. Coat the patties with the chocolate. This is the messy part and I haven't found an alternative way without special equipment. None the less a fun awesome recipe to do alone or with family.
SO HOW'D IT GO?
Nialee, your peppermint patties look like they came out of a fancy candy box. How did you get them so perfectly shaped like that?
These are SOOO worth the time and messiness. The niece and nephew loved making them. This is definitely a treat I would recommend making with the lil ones, they loved playing with the "mint dough" and getting chocolate all over themselves! A memory maker for sure and the ending result is oooooh soo delicious.
Yummy! These didn't end up quite so much "healthier" for me since I decided to make these last minute, and all we had in the house was artificial peppermint extract and cheap-o corn syrup. But still, very delicious and easy! I did the peanut butter cup method by rolling the filling into balls, putting them in muffin paper, and then pouring the melted chocolate over the filling, so they look more like truffles. I will definitely make these again, next time with peppermint oil. I'm storing/hiding them in the freezer so I don't eat all of them at once. ;D
I found some candy molds I had before and first sprayed with non stick then I put melted chocolate in the molds. Just to make a chocolate layer. Then placed in the freezer to harden faster for a minute. Then I put the mixture batch in each mold. Then I put more melted chocolate on top to enclose them placed in the freezer once more to cool faster and popped them out and wallah! No mess and whatever mold shape you have. I happened to have some Easter mold ducks and things This recipe was great! My B/f really loves it and I can't tell the difference. Thanks! ;D
when I have chocolate covered peanut butter balls, piercing them with a long toothpick and dipping into melted chocolate works. Will that not work here?
... orange, strawberry, coconut... almond's not my thing, what are some other possibilities?
How about vanilla, lemon, cherry, banana, ... the possibilities are endless. You could even put a little bit of cocoa powder in the filling. Double chocolate.
you can make a double boiler so you don't burn the chocolate. place a 2 inches of water in a saucepan and let boil. place chocolate in a glass bowl that rests on top of saucepan (but doesn't fall in ) stir chocolate and let melt. Reduce heat as needed. Best part about this is that if you don't use all the chocolate or don't feel like making any more patties you can place the bowl in the fridge/freezer and reheat later. I haven't tried this recipe, don't ahve peppermint, but it sounds great
WOW. Better than the real thing, by far. Two omnis close to my heart cannot disagree. I've already been asked to make them again (only did 1/3 the recipe). Next time will definitely try them with different flavours... orange, strawberry, coconut... almond's not my thing, what are some other possibilities?
Thank you so much for this recipe, EarthChild! I've been paying almost $3 each for those ginormous peppermint patties from Vegan Essentials, and although they are good they're a bit pricey and the texture isn't quite right. I found this recipe last week and decided to give it a try - I only made half a recipe and didn't bother with the chocolate coating because I'm lazy, but even without the chocolate they are amazing! I've already been asked to make them again (a full batch this time, and with chocolate). AND I already have plans to put these in my winter holiday baskets this year! Thanks so much for making my peppermint candy addiction more affordable!
I'm super happy to see it on the home page too.
By the way your pictures look great.
