Yams and Apples

What you need: 

6 to 8 yams
5 to 6 pippen or golden delicious apples
1/2 cup sugar
1 cup water
1/4 cup margarine
1 1/2 tablespoons cornstarch
1/2 teaspoon salt

What you do: 

1. Preheat oven to 350 degrees F and grease a casserole dish. Boil yams until barely tender (whole or cut width wise, in big pieces). Peel. Cool.
2. Slice and alternate yams and peeled apple rings in prepared casserole dish.
3. Boil vegan sugar, water, margarine, cornstarch and salt, until it begins to thicken.
4. Pour over yams and apples and bake, covered for 1 hour.

SO HOW'D IT GO?

This is an awesome, versatile recipe. I made this for Thanksgiving today and it was a big hit, but I did some things differently - I used a little less than half a cup maple syrup instead of the sugar, added cinnamon to the mixture, topped it with chopped walnuts and almonds, and took the cover off for the last 15 minutes or so of the baking so the nuts could crisp. It was amazinggggg. Oh, I feel like the apple to yam ratio was a bit different (maybe less apples?) but with size variation I guess that doesn't matter so much.

This was pretty good. I had run out of margarine this morning and it definately made a difference in the dish but i think if it had it then it would have been  a lot better.
