World's Simplest Hearty Vegan Crockpot Stew

What you need: 

3 heaping tablespoons cornstarch + water
5 cups faux chicken broth
3 tablespoons soy sauce
1 teaspoon Italian seasoning
salt and pepper, to taste
5 tablespoons vegan Worcestershire
1 (8 ounce) can tomato sauce
1-2 (15 ounce) cans diced tomatoes with basil and garlic
3 cloves garlic, crushed
1 1/2 cups onion, chopped
1/2 cup white mushrooms, diced
1 small sweet potato, peeled and chopped
4 carrots, peeled and chopped
2-3 zucchini, sliced
3/4 cup corn
3/4 cup peas
1/2 cup uncooked quinoa
3/4 cup uncooked red lentils
1 cup regular garbanzo beans
1 cup green garbanzo beans

What you do: 

1. Whisk cornstarch with a bit of water until not clumpy.
2. Throw everything in crockpot (I refuse to pre-saute anything or add ingredients at different times because that defeats the purpose of the crockpot, to me).
3. Leave it for 6-8 hours on low, or 4 or so hours on high, come back et voila: dinner!
This stew is high protein and really yum. You'll get a lot of meals out of this with minimal effort. I like to garnish each bowl with a dollop of Tofutti Better Than Sour Cream before serving. Sometimes I also like to add 1/2 cup chopped walnuts and 2 chopped Boca burgers to the stew.

SO HOW'D IT GO?

this was really good, but like several people said, it doesn't fit in the crockpot!  I had to cook some of it separately on the stove.

Quick question, would you still rinse your quinoa before adding it to crockpot? I've never not rinsed it, I hear it's bitter if not rinsed, but I didn't know if it would add a good flavor with everything else in it (I'm a VERY novice cook by the way :-\). Thanks!  :D

Bean stew is a lot better than beef stew. I was very impressed with it when I tried it for the first time. Its also a lot cheaper since beef is a bit of an expensive ingredient. I think you guys will all be impressed with this! :)

This was decent though i didn't add the mushrooms, sweet potato, or zucchini since i didn't have them on hand... so maybe that would have made this amazing i dunno... FYI the stew really thickens the next day, the first day mine was soupy... it was good with some cut up tofurkey sausages added :)

This was incredibly easy and YUMMY  Thank you!!! I changed the recipes slightly ( no worchestire) and different veggies ( what I had fresh) and I added 1/2 cup od pearl barely and used Kudzu instead of cornstarch and it worked great!!! I also used 1 cup of Red's Mills veggie soup mix.  I love this website :)>>>

What are green garbonzo beans though? I haven't seen those before.

I totally agree with your slow cooker mentality - why should i have to do anything but put things in it?

This was pretty good. I'm still getting used to the idea of bean stews and I really liked this. Also a pretty versatile recipe. I had to make this in a mad rush and used garlic powder instead of crushed garlic and eyed most of the amounts. Turned out great though!

First off, I don't know how big your crockpot is, but holy smokes! I *couldn't* add everything, my 6 qt crockpot was overflowing!

I didn't add any carrots, corn or peas. I did add a small eggplant, cubed. I also substituted regular chick peas for the green chick peas. Also, I didn't have Italian seasoning, so I just tossed in some oregano, dried basil, and romsemary.

This was fabulous! My 2 yo didn't eat it, but he hardly ever likes what I cook!

This was really easy! THe only weird thing was that it had a strong potato smell for much of the day, which I didn't understand since I didn't use any white potatoes and just one sweet potato. Hmm!

Okay, this is fabulous! I didn't have all the ingredients and/or modified some things, but wow, this is SOOOOOOO goooooooooood! I can't wait for lunch to have my leftovers! Here's what I subbed: 1) veggie broth for faux chix broth 2) 1 1/2 TBS Bragg's for 3 TBS soy sauce 3) 1/2 TSP each dried basil and oregano for the 1 TSP Italian seasoning 4) omitted vegan Worcestershire 5) subbed garbanzo flour for the cornstarch 6) omitted mushrooms, corn and carrots 7) used 1 19-oz can garbanzo beans. Even with all of these omissions, my crockpot was still filled to the brim. I put in on low at 7 a.m. and came home at 5:30, threw some jasmine rice in my rice cooker, and sat down to eat the stew over rice at 6 o'clock. It was so absolutely delicious and sooo easy! THANK YOU THANK YOU THANK YOU for this delightful recipe!!
