Winter Pear and Spinach Salad

What you need: 

4 cups spinach, torn

2 large Bosc pears, thinly sliced

2 tablespoon red onions, minced

6 tablespoon balsamic vinegar

6 tablespoons water

2 tablespoon olive oil

1 teaspoon Dijon mustard

1 clove garlic, minced

What you do: 

Place the spinach leaves on a large platter or individual salad plates. Arrange the pears on the spinach in a fan pattern. Sprinkle with the onions. In a small bowl, whisk together the vinegar, water, oil, mustard and garlic. Drizzle over salad.

SO HOW'D IT GO?

Made this for Thanksgiving, and it was really pretty and festive with the pear slices fanned out. The dressing was good, too. I didn't have red onion, so I threw a few tomato slices on top of the spinach for color. This is a really simple salad, but a good one, and the presentation was beautiful.

Delicious!  I was unsure about putting red onion in a pear salad but it turned out to be lovely.  :)>>>

:) Hi all. I've taken this salad to 2 parties and am taking it again tonight to a raw vegan potluck. It's always a hit!! ;)b I just throw it together though. I don't take the time to do the presentation listed but like I said, people give me rave reviews!! I generally use white wine vinegar rather than balsamic and whatever pears I can find at the store. Tonight I used apple cider vinegar and honestly I think it's lost a bit of it's bite  ??? It's definitely still yummy though!! I love this recipe. Thanks tons for posting it!!
