Waldorf Rice

What you need: 

1 cup water
1 cup raisins
1/2 cup crushed walnuts
2 celery stalks
3 cups cold cooked rice

What you do: 

Simmer raisins and walnuts in the water. Chop the celery very fine. Remove pot from heat. Add celery then rice. Mix well and allow to stand for 10 min or longer before serving. This is sweet, satisfying, and crunchy. It keeps me going through the whole day.
