Waffles
What you need:
3 cups water
1 tablespoon vanilla or maple flavoring
1 tablespoon date sugar or 2 to 3 dates
2 cups oats
1 1/2 cups cornmeal
1/2 cup coconut
1/4 cup sunflower seeds
2 teaspoons salt
2 tablespoons sesame seeds
1 tablespoon flax seeds
What you do:
1. Blend all ingredients together in blender.
2. Preheat waffle iron according to manufacturer's directions.
3. Pour batter from blender onto hot waffle iron, and cook according to directions.
Can store dry ingredients in freezer. Add water and vanilla or maple to bake.

There is an excellent, simple recipe for pancakes/waffles in Erin Pavlina's 'Raising vegan children in a non-vegan world':
1 c. unbleached all purpose flour
1 tablespoon sugar
2 tablespoons baking powder
1/ tsp. salt
1c. soymilk
2 tbs. vegetable oil
*You can add blueberries, chocolate chips, flax seeds, bananas, etc to the pancakes/waffles for an added treat!*
I have used this recipe time after time and it's great.
ps: I also put only 1 tsp of salt in it. 2 sounds like a lot?
they look amazing! haven't had a bite of them yet, but the smell is driving me bonkers.
I replaced the date sugar by simple brown sugar, added chocolate chips; I didn't have sesame seeds so I replaced the 2 tbsps with ground flax seeds instead.
and I used multigrain milk rather than the cups of water, to add nutritional value.
