Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

I tried this today ... used agave nectar instead of sugar and applesauce instead of oil and it totally bombed :(
Don't know what I did wrong.. the muffins stuck to the muffin wrappers on the side. They were very chewy... the batter tasted fine, but not the muffins.

Muffins and cupcakes will always stick to the paper if they don't contain adequate fat. Leaving out the oil will get you a sad glue-muffin that isn't as tender as one made with oil or butter. Even reducing the recommended oil by a small amount can lead to the paper sticking- be sure to let the muffins cool completely. It's usually easier to remove it all in one piece if it's sat our for several hours, or even a whole day.

Another contributor to chewy baked goods is overmixing... it's possible you stirred the batter too much!

I made these using half all purpose flour and half oat bran. I also used very vanilla soymilk and added 1/4 cup sugar because the other reviews stated that these weren't very sweet. Well i forgot how much sugar is in very vanilla soymilk...ha! so they were pretty sweet! I tossed the blueberries in flour before folding in but they still sunk to the bottom and because i didn't use paper liners and greased the muffin tin instead they all broke in half while tying to get them out. They took 20 minutes to cook on 400 degrees.
Overall they were alright. The thing that i liked best about them was the crunchy tops and moist insides. I'm not sure if i would make them again or not. They were super easy and fast though.

I told my book group I would bring muffins - now onto another option!

These were phenominal.  I used maple syrup for the sugar and they tasted very similar to the vegan muffins I get at whole foods.  An easy alternative to blueberry pancakes! :)

These are pretty darn tasty, especially considering how easy they were. It took me literally 5 minutes to whip together, and the end result was delicious! I added about 1 tsp. vanilla extract, plus 1/4 c. orange juice (in place of 1/4 c. of the soy milk). I also only used 2 Tbsp. canola oil, and used whole wheat pastry flour. YUM!

i madeee a few changes, mainly substitutions for sugar and oil. overall theyyy turned out well, although i used frozen blackberries in placeee of blueberries, and i didn't reallyyy care for them.
probablyyy much better with the blueberries.
will definitely make agaaain. <3

these were so easy and very yummy!  its nice to have such an easy recipe to make that doesn't require 100 different ingredients.

I used fresh blueberries and rolled them in raw sugar first.  Sprayed the muffin cups rather than use paper liners.  And used brown sugar.  Plus I created my own topping with a little vegan butter, almond powder & raw sugar.

These were SO good.  This recipe is very versatile.  I didn't have the blueberries so I folded in about 1/2 cup of strawberry preserves. I can't wait to try the other suggestions in the reviews, blueberries too :)

Very yummy! I suggest adding a crumb topping to these. Mix 3 tablespoons cold earth balance, 1/3 cup flour and 1/4 cup sugar, together in a small bowl. Mix with a fork or you fingers until tiny crumbs; sprinkle over muffins before baking....VERY GOOD!

I just tried to make them. I didn't have blueberries, so I added apples and they were just GREAT!!! Thanks for the recipe
