Veggie Pot Pie

What you need: 

1 large onion, diced
olive oil or vegan butter (I use Earth Balance)
2 vegetable bouillon cubes (not tomato)
8-10 ounces hot water
1-2 medium/large potatoes, peeled and cubed
1 pound extra firm tofu, drained and cubed
1 cup peas
2-3 carrots, sliced
1/2 cup celery, optional
1/4 cup mushrooms, optional
bay leaves , to taste
3 cloves garlic, chopped
1 pie crust (I like to make my own based on the pastry in The Joy of Cooking and use Earth Balance
shortening)

What you do: 

1. Preheat oven to 350 degrees F. First, saute the onion in oil or vegan butter in a large pot until the onion turns translucent. Dissolve the bouillon cubes in the hot water.
2. Add potatoes and bouillon mixture to pot, cooking on medium heat and stirring frequently. After 5 minutes, add the tofu, the rest of the vegetables, the bay leaves, and garlic, and cover.
3. Cook for 20-30 minutes, until the potatoes are cooked and the mixture is not too liquidy. If there is an excess of watery broth, leave the lid off for a while so some cooks off, or add a little flour to make it thicker. If there is no liquid and it seems dry, add a little more broth or water.
4. Remove the bay leaves. When mixture is done, spoon it into the pie crust, and bake, uncovered for 30 minutes. Make sure the crust does not burn.'

SO HOW'D IT GO?

I made it mostly successfully. I kinda burnt the mixture because I used too many potatoes. I added extra broth though, so I just didn't use the burnt stuff on the bottom layer. The directions were extremely confusing when it came to the crust. It never said when to add the top part, so I just followed the directions on the crusts and cooked it for 30 minutes with the top crust on. It was SO good. Served with asparagus, it was a very healthy dinner for my friends. a regular vegan night for me.  ;D

This was AWESOME!!!! I added a little salt, freshly ground pepper and a top. I just can't get over how tasty this recipe was. ;)b

Seriously people, make this pot pie. It will wow everyone. Make sure to add some black pepper to the filling, too :)

This was fantastic! Shared it with my boyfriend and another friend, the 3 of us ate the whole pie! I added everything but the tofu, and it was great. I'm sure I'll be asked to make this again.

I make this pot pie alllll the time. I leave out the celery and mushrooms and I use one sweet potato and one russet potato.  Sometimes I make a crust on top, too, because crusts are yummy.  This is great to make for a big group of people but sometimes I just make it for myself and it lasts all week!

this was reallllllly good if you're hungry and want something substantial - baked the  tofu before i put it in mine and put more spice in it too.
