Vegetable Lentil Wild Rice Soup
What you need:
2 medium carrots chopped
1 large potato cubed
2 cups sliced cabbage
1 can diced tomatoes (32 oz.)
1 medium onion
2 cloves garlic
1 tablespoon thyme
1 tablespoon parsley
1 tablespoon garlic powder
salt & pepper to taste
3 cubes vegetable bouillon
1/4 cup lentils
1/4 cup wild rice
1 tablespoon olive oil
What you do:
Chop the onions and garlic and saute them in olive oil until they are almost cooked through. Add the spices, bouillon, 6 cups of water, the lentils and wild rice. Bring to a boil and then add the can of tomatoes (with the liquid) and the carrots, potatoes and cabbage you've prepared. Lower heat and keep at a simmer for about 30 minutes. Enjoy! Other suggestions for additions to this soup: Chickpeas, canned sliced green beans, and brown rice.

Yum, Yum, Yum! thanks for this easy recipe. I also doubled the lentils and rice and used brown rice. I used a little green curry paste and lots of ginger instead of the other spices.
I was so pleased with the outcome!! I did as the other posters and added extra lentils and rice, I also added some basil and cayenne and topped it off with some cilantro. Since I'm not a huge potato fan I added celery instead. The wild rice adds such a nice texture I almost added brown but was really glad I didn't.
This soup was really good. I served it with fresh avocados and chopped fresh parsley on top. One of our new favorites.
I really love this soup. It is sooooooo yummy. I made it for the second time tonight. Tonight I added a sweet potato, celery, extra garlic, double rice and lentils, more liquid and fresh parsley. Thanks for the great and nutrient rich recipe!
this was a great soup! i didn't have cabbage so left that out and doubled the rice and lentils. made it for a sick sister and she loved it too. thanks!
This was really tasty. The only thing that I changed was doubling the amount of lentils and wild rice for a heartier soup. Thanks for the good soup recipe!
