Vegan "Shrimp"
4 medium carrots, shredded
1 cup flour
1 cup water
vegan egg replacer for 1 egg
garlic salt (I use about a teaspoon, but that's 'cause I love garlic!)
1/2 teaspoon Paprika
yeast, just a pinch
pepper to taste
frying oil
These don't taste like the real thing, but are just delicious!
Mix all the ingredients, except the carrots and oil, until you get a thick sauce with no lumps. While you do this, heat the oil in a frying pan. Add the carrots to the mixture and coat evenly. Take a spoonful of the mixture and put it in the hot oil, you can use the spoon to shape the mixture kind of like a shrimp :P. Make sure the "shrimps" are crispy, carrots have a lot of humidity and this may make them a bit chewy. If you serve them immediately over a bed of lettuce, you'll get a great meal. You can make a dip with vegan mayo and chopped cucumber and onion, yummy!
SO HOW'D IT GO?
I made mine gluten free with fine white rice flour and some guar gum as an egg replacer and binder. I didn't use any yeast. My "shrimp" didn't get very crunchy, but rather chewy, so the texture was pretty close to real shrimp. The color was a good match as well. Maybe, it's because I like my food well-seasoned, but I felt that something was missing, so I added some seasoning with salt, garlic, and pepper. This didn't really taste like shrimp, but maybe some crumbled nori sheets could fix that. I might try that next time. The way my recipe turned out, this made pretty nice carrot cakes.
