Vegan Green Bean Casserole

What you need: 

1-1/2 cups nondairy milk
1 (2.5-ounce) cube veggie bouillon
1 to 2 tablespoons vegetable oil
1/2 medium onion, diced
3/4 cup chopped mushrooms (button, crimini, portabella, whatever)
1 carrot, diced
1/2 teaspoon basil
1/2 teaspoon garlic
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/2 teaspoon pepper
1/2 teaspoon sage
1/2 teaspoon salt
1/2 teaspoon thyme
2 or 3 tablespoons cornstarch or potato starch
2 or 3 tablespoons cold water
1 (14.5-ounce) can French cut green beans
1-1/2 (24-ounce) canisters vegan French fried onions

What you do: 

1. In a saucepan, heat the nondairy milk and veggie bouillon; stir until bouillon cube disintegrates. Just heat the milk, do not boil or scald it.
2. In a skillet, heat the oil. Add the onions, mushrooms, and carrots; saute until the onions are translucent. Add the herbs and spices (basil, garlic, marjoram, oregano, pepper, sage, salt, and thyme - and whatever other hearty herbs make you happy).
3. Make a thickener by combining cornstarch and cold water; mix well. Pour into the nondairy milk-bouillon mixture. Stir well, because this will coagulate pretty quickly.
4. Quickly add the can of green beans, the sautéed veggies, and about half of the French fried onions; stir well. Pour that mixture into a casserole dish or pan and top with remaining French fried onions.
5. Bake at 350 degrees Fahrenheit for 10 to 15 minutes, or until the French fried onions begin to brown. Remove. Eat. Enjoy.

I have made this twice now.  The first time I made it, I followed the recipe exactly.  I didn't care for the spice blend.  So the next time, I altered it.  I used less sage and marjoram and only a sprinkle of thyme.  I LOVED it that way.  It tasted just like the non-vegan version I grew up with.  Everyone who tried it agreed.

FYI homemade french fried onions are really good and really easy. Slice onions thinly and let soak in ice water for 1 hour. Meanwhile, mix 1/2 c. flour with 1 tsp salt and 1/2 tsp pepper. Thoroughly dry the onions when finished soaking. Heat canola oil and fry until golden and crispy. Drain fried onions on a cooling rack instead of paper towels for effective drainage.

This is a great little add-on recipe. The homemade fried onions are a hit!!!  ;)b


PS I used a 1-lb bag of regular-cut green beans, because it was 50 cents at my supermarket!


This was ABSOLUTELY delicious! It WAS my dinner tonight (no, not part of my dinner, it was just a bunch of this in a big ol' bowl!)

I followed the directions nearly step-by-step. I used baby bella mushrooms as my mushrooms, which was delicious. The boullion cubes I get are two servings per cube--one of these cubes was perfect. I used low-fat soy milk (because that's what I had), and it worked beautifully. (This is a major advantage of incorporating the corn starch--you can work with lower-fat soy-dairy and still have it turn out rich and wonderful). I added thyme, oregano (I think), marjoram, AND sage--it was delicious altogether.

My french fried onions, unfortunately, turned out to be one big pile of delicious goop. I followed the directions in the comments and it didn't quite take. (I think it would have if I had a deep-fryer, or if I had pan-fried them in smaller batches.) The goop method worked too, though--I put half the goop in the mix and half the goop on top, and it was delicious! I broiled the casserole for 5 mintues at the end to get the top goop a little crunchy, and it worked well. If I was doing this for company I might look for a decent canned onion.


i wasnt really a fan of this, i never liked the original but was hoping this would be different.  other people (omnis) really liked it but i wouldnt make it for myself again.  (i did like the onions that i made though)


Mmm.  This was wonnnderful.  I realized once I started heating the soymilk that I didn't have any boullion left, so I just threw in some veggie broth, and I used a bag of fresh green beans instead of canned.  Oh, it was fabulous.   :)


wow. I made this today for thanksgiving and both of our omni families LOVED it.  Everyone said it was better than any other they have ever had.  I have never really liked green bean casserole and i loved this. Thank You!


Oh my goodness this is delish! I made this for the first time tonight for DD's first birthday party and it was a huge hit among the family as well as the non veg/vegan party go-ers. I will definitely be making this for Thanksgiving as well. IMHO a huge step above the canned soup variety. Also, I used 2 cans of greenbeans and it was perfect that way!  :)>>>

I enjoyed this. I don't think I loved it as much as some others...but I don't know that I ever liked green bean casserole. One of our guests really loved it, and can't talking about it! My onions didn't come out spectacularly (tasted good, but not crunchy) b/c I made my own...but it was still good. I also don't like thyme, so I don't know why I added that..I just used one can of regular green beans.
