Vegan Chocolate Frosting
What you need:
1 cup vegan margarine, at room temperature
4 cups powdered sugar (make your own by blending sugar and cornstarch)
dash salt
2 tablespoons vanilla
4 tablespoons nondairy milk
1/2 cup cocoa powder
What you do:
1. Blend margarine until mushy.
2. Add vegan powdered sugar, salt, vanilla, milk, and cocoa (all remaining ingredients).
3. You can add in more milk to make it a bit smoother, but not too much. Spread on cake and enjoy.

really delicious frosting, but makes a ton, probably like 4 cups' worth, i only needed half of it to frost a regular-sized cake. i put the rest in the freezer; hopefully it will keep well that way. tastes amazing though and is really easy to make. i didn't need to add any extra liquid, but i like really thick frosting. I used earth balance as well, about 3 3/4 cup powdered sugar, a little less than the amount called for vanilla, and rice instead of soy milk.
Great recipe! I've tried a few variations on it. It works well with Agave in place of Sugar but you have to add in a little flour or cornstarch (sprinkle, don't dump) to thicken it up. I would also recommend getting the cocoa powder as fine as possible if your brand is a little clumpier. Like some of the other reviewers I found that it doesn't need as much vanillia as the recipe calls for.
MMmmmmmmmmmmmmmmmmmm. This turned out really well. I just set the margarine in a bowl on top of the warm oven while I had my cakes in and it was soft enough in a couple of minutes to mix with the remaining ingredients. Very simple and tasty. I am waiting to frost the cakes until they cool, but I cant seem to keep the frosting spoon in the bowl! I wonder how much butter I've eaten so far... :P
This is the 2nd time I've used this recipe, this time I 1/2ed the recipe because it was a smaller cake.

I used Starbucks Mocha powder instead of cocoa. That was a good idea... I'm glad I did it.

Yes, I used the Earth Balance tub margarine, and it turned out great!
Can I use the tub Earth Balance margarine for this? It seems like it would be too oily but they don't carry any kind of vegan sticks here.
This frosting is awesome! I only used about 3 tablespoons of the soy milk to get the consistency I wanted. I will use this recipe again and again. You can leave out the cocoa for a vanilla buttercream frosting (reduce the liquid, if you do), and you can use different extracts for different flavored frostings.
this is sooo good and so easy! it really does make a lot...enough to generously frost 2-8 inch round cakes with some to spare. thanks for sharing this recipe..it really is a gem!
This turned out great!
I didn't have powdered sugar on hand, but took the suggestion of making my own and used 1 C sugar to 1 T cornstarch mixed in a Vitamixer. I don't think I would have tried it otherwise.
I used rice milk and Tofutti cream cheese and vanilla then just mixed everything adding more sugar to get the consistency I wanted.
I ended up with enough to ice a two (very thin) layer round cake.
Yay for icing!!
