Vegan Cajun Beans and Rice

What you need: 

1 tablespoon olive or canola oil
1 medium onion, diced
1 medium green bell pepper, diced
2 cloves garlic, minced
2 - 15 ounce cans cannellini beans, drained and rinsed
3 1/2 cups canned stewed tomatoes with onions, green peppers, and celery
1/2 teaspoon hot pepper sauce (like Tabasco), optional
6 cups cooked white rice
1/2 teaspoon thyme, optional

What you do: 

1) Heat olive oil in a large saute pan over medium-high heat. Add diced green pepper and onion. Saute for about 8 minutes. Add minced garlic. Saute for about 2 additional minutes. Add beans, stewed tomatoes, thyme, and hot pepper sauce. Cook for about 10 minutes until well blended and thoroughly heated. Serve over rice. Enjoy!

SO HOW'D IT GO?

Trust me i am not a huge fan of food, nor do i cook much for the same reason. I only grab the essentials and do not undergo a big deal about it. Just make sure you do try it. Cause even i liked it in spite of all these. ICD 10 Coding
