1 tablespoon olive or canola oil
1 medium onion, diced
1 medium green bell pepper, diced
2 cloves garlic, minced
2 - 15 ounce cans cannellini beans, drained and rinsed
3 1/2 cups canned stewed tomatoes with onions, green peppers, and celery
1/2 teaspoon hot pepper sauce (like Tabasco), optional
6 cups cooked white rice
1/2 teaspoon thyme, optional
1) Heat olive oil in a large saute pan over medium-high heat. Add diced green pepper and onion. Saute for about 8 minutes. Add minced garlic. Saute for about 2 additional minutes. Add beans, stewed tomatoes, thyme, and hot pepper sauce. Cook for about 10 minutes until well blended and thoroughly heated. Serve over rice. Enjoy!
