Vegan Broccoli Soup
What you need:
3 cups water
1-2 fresh broccoli heads, chopped to florets
salt, to taste
What you do:
1. Bring the 3 cups water to a boil. Add broccoli with a pinch salt.
2. After the broccoli turns a very lovely green color (3-5 minutes), put florets into the blender.
3. While pulsing, ladle the water from the pot in the blender. Please add a little bit at a time until you get the consistency that you like.
4. Season, to taste.

Dear Mim21, Thank you so much for the comment! FRESH BROCCOLI is essential. I'm sorry that you guys did not enjoy it but it is vegan, easy, simple, and above all delicious. It is my favourite and will stay my favourite till the end of time. Im sure Chef Ramsay doesn't think it's bland and I'm glad he has made it as well.
To those who commented that this was bland or needed tons of other ingredients, it is important to note that basic, simple vegetable soups such as this one are a staple of any experienced chef/cook. Of course you can add salt to taste or add another spice if you prefer but to say that you need broth or anything beyond what the recipe calls for is incorrect. If this isn't for you, that's of course your opinion, but it's not the recipe's fault.
Having this for dinner tonight; I loved it the last time and will love it again!
Normally "season to taste" means salt+pepper, but I almost have to wonder here if it means adding broth, garlic, chili flakes, lemon juice, etc.
I don't want to hurt anyone's feelings, but this was dreadful. I was suspicious of its simplicity but made it anyway. It was as bland as broccoli + water sounds.
I actually got this recipe from Chef Ramsay and made it the other day. It is the most wonderful satisfying easy soup I have ever made! Even my family who is not vegan and pretty much hates 90% of veggies loved it. I told my kids that it was monster soup because of the green color and they gobbled it right up.
i played with this adding some carrot and chili along with oatmilk. wonderful!
