Vanilla Ice Cream!...no, really!
3/4 cup nondairy milk (I use plain soy)
1/4 cup salad oil (refined vegetable oil)
4 tablespoons fructose (you can tell me if it works with other sugars too, haven't tried)
8 drops vanilla extract
1. Put milk and vegetable oil in a blender. Blend for 1 minute.
2. Put fructose into blender, and blend for 1 minute.
3. Pour into a container. Add vanilla on top, and stir. It should taste like melted ice cream at this point!
4. Put in freezer until desired consistency is reached.
When it's ready, the only difference is that there might be some ice shavings in the bottom, similar to what happens to ice cream when it unfreezes and freezes again. You can try mashing it and re-freezing it. But it tastes like regular vanilla ice cream to me, which means you can make recipes with it in place of ice cream.
SO HOW'D IT GO?
I want to try it with maple syrup for the sweetener and maybe chopped walnuts.

made! we did chocolate (i added about 1/8 c cocoa powder and 2 scoops nesquick) and oreo (3 smashed oreos). kid approved. thank you again!

WOW this was really good!!! I doubled the recipe, made it strawberry flavored by adding 2 cups of frozen strawberries. I used canola oil, vanilla sweetened almond milk, 2 teaspoons vanilla extract, and raw sugar for the sweetener. My new go-to ice cream recipe!
This was great and really worked. I used safflower oil.

Perhaps it was your addition of almond extract. It may have lowered the freezing point. Otherwise I'm not sure. Best of luck in the future.

Ok... so, I'm not exactly sure what to think of this recipe...
It's too simple and easy to be true.
I followed the recipe exactly, with some additions: almond extract and chocolate shavings. After about an hour in the ice cream maker it got *kind of* ice cream-y. I bowled some up and within seconds it began to separate. I put it in the freezer for about 20 hours and it got a little firmer, but had the same problem when I tried to eat it.
The look of it reminded me more of icing that wasn't mixed long enough.
On the other hand...
The flavor was FANTASTIC. Amazing. I ate more than I should have just because it tasted so darn good. I did add a lot of almond to it so I can't say much for the flavor of the original recipe. Afterwards I had the worst stomach ache, which I must attribute to all of that oil.
I ended up throwing away more than half of it (after doubling the recipe, boo!) and I won't be making it again.
Hmm, I wonder what went wrong. Maybe since I wasn't using an ice cream maker? Oh well, I did manage to salvage it. I just sifted out all of the chunks of coconut oil, then replaced it with some other oil. Worked lovely :)
I make ice cream with coconut oil all the time. You have to warm everything together and blend. It turns out great. I hope you salvaged yours.
Wow. I had a major brain lapse. I was running low on vegetable oil, so I thought that coconut oil would be suitable. I sorta forgot that coconut oil solidifies like it does, so now I have chunks of oil floating on top of soymilk. It looks like the curds and whey when they make cheese :(
Attempting to salvage it, probably gonna fail.
