Tuscan Kale

What you need: 

1 tablespoon olive oil
1/2 medium red onion, sliced
2 cloves garlic, minced
salt and pepper, to taste
1 large bunch dinosaur kale, de-stemmed and chopped
1/4 cup water
1-2 tablespoons red wine vinegar

What you do: 

1. In a large skillet, saute the onions and garlic in olive oil with the salt and pepper over medium heat until the onions are translucent.
2. Add the kale and water. Cook until water evaporates. Add the red wine vinegar and cook for another 1-2 minutes.

I have to say this simple recipe is simply awesome. It's so easy to make and I ALWAYS have leftover onion to get rid of--- not to mention it's packed full of nutrition! I think it tastes great with a little bit of brown rice.  I added "matchstick" carrots and sliced mushrooms to mine (about 5 minutes after the onion) and before adding the kale.
