True Spanish Gazpacho

What you need: 

6 Tomatoes
1 Cucumber
1 Green pepper
2 cloves of garlic
1 cup olive oil
1/2 cup wine vinegar
1 teaspoon of salt
water

What you do: 

Put the tomatoes in boiling water for 30 secs to make peeling easier and dice it in small chunks Peel cucumber and dice it small. Dice pepper and garlic cloves very small. Mix all the vegetables in a food processor starting with tomatoes until it gets soup consistency. Add the vinegar and pour oil slowly without stopping the mixer. Add some cold water if the mix gets thick. Gazpacho should be a soup, not a cream. Add salt to taste. True spanish gazpacho don´t need onion, but you can add some if you like it. Serve cold.

SO HOW'D IT GO?

Also, are the tomatoes Roma or another variety? My hubby is hispanic and all we buy are Romas. I know Spanish and Mexican cuisines differ greatly but just curious....

Is the "green pepper" used in this recipe like a bell pepper or a cubanelle that is only slightly spicy or like a jalapeno?

I love this gazpacho! I do only use 1/4 cup vinegar and 1/2 cup oil however. Other than that, it is the perfect gazpacho. I like to leave a little of the pepper and cucumber diced in cubes and add that at the end for a bit of crunch. Sometimes I'll also add some onion that way too.

Yeah! this is the real deal... my childhood gazpacho... i also put stale bread in it AND i deseed the tomatoes before putting it in all the ingredients (just pass it through a sieve after peel and dice and blend)... the little seeds have a slight bitter taste.

Good to see a REAL recipe for Gazpacho. I like mine with onion and also add a bit of stale bread soaked in chill water, though. I never put a set amount of each ingredient, I always kind of eyeball what I put on it, it really depends on the preferences of each person. Some people prefer red peppers instead of green or put both; some like onion, others don't; the bread is also optional; the vinegar can be wine or sherry vinegar.

Apart from that, if you add other things it might be a good recipe but not Gazpacho...

Por fin una receta de Gazpacho de verdad, como la que hacemos en casa! No entiendo por que la gente se lia a triturar cualquier verdura en la minipimer y luego lo llaman "gazpacho"...
