Tortilla Pie

What you need: 

1 cup of textured soy protein granules rehydrated in 1 cup of vegetable broth
1 - 15 oz can of black beans
1 - 15 oz can of refried beans
1 small onion minced
1/2 can of frozen sweet corn, thawed
2 - 10 soft flour tortillas
1 cup salsa
chili powder
garlic powder
vegan soy cheese-cheddar flavor, shredded
1 tomato, diced

What you do: 

Combine textured soy protein, black beans, refried beans, onion, corn and salsa in a bowl. Place one tortilla in the bottom of an oiled pie pan. Spread with salsa (like you would a pizza crust) add half of the bean mixture. sprinkle with more salsa and some soy cheese. Place another tortilla on the top, spread salsa on it and sprinkle with the diced tomato and more soy cheese. Bake for 30-40 minutes in 350 degree oven. you can either freeze the rest of the bean mixture to use another time or make 2 pies. If making two pies, just double the number of tortillas and tomatoes. We have found that this tastes even better if I make it one day, then cover & refrigerate and we eat it the next day.

SO HOW'D IT GO?

This is actually my recipe from my really old vegweb account. I hadn't visited in ages and when I came back, my old account was gone. but I am glad to see my recipes survived. I had lost this one in a move years ago.
