Tofu Waldorf Salad Thingy

What you need: 

2 1/2 cups cooked rice (I like jasmine)
1 block firm tofu
1/4 cup soy yogurt (plain)
1/4 cup soy mayonnaise
1 apple cut into small cubes (I like fujis because dey so crispy)
2 tablespoons sugar
salt and pepper to taste
some chopped parsley
juice from 1/2 a lemon
oil (for frying the tofu)
1/4 cup walnuts, chopped

What you do: 

I'm sorry if the amounts aren't quite right, but I never ever ever ever measure anything (even baking). Everything is an approximation in my recipes.
Hokay!1. Press the tofu until it's real dry. Cut it into about 1 inch squares. Heat the oil in a pan until when you put some tofu in it, it fries up (350 Degrees Farenheit is about right). Fry them bad boys up. Flip them when golden, fry the other side. Let drain on a plate that has lots of paper towels/towels on it. 2. Combine the vegan yogurt and the vegan mayonnaise. Mix 'em up and put the sugar and parsley in too.3. Add the yogurt-mayonnaise mix to the rice. Mix in the apples, walnuts and raisins. 4. Now put the tofu pieces in there, as well as the lemon juice (or if you prefer, some vinegar), and mix this carefully. MUST MAINTAIN THE INTEGRITY OF THE FRIED TOFU! Because it is nice the way it is. 5. Put this big bowl of fruity-proteiny-ricey deliciousness in the fridge for a long time until it's real cold. I'd say 2 hours. Now we eats!
Source of recipe: They had this at whole foods. I'm not sure what their recipe is/was so I just tried to make what sounds good.
